A simple desert that everyone loves – pleasing to both the eye and the palate.
6 egg whites
350g caster sugar
1 tsp cornflour
2 drops vanilla or almond essence – optional
500ml fresh cream
Fresh Wexford strawberries
2 passion fruit
Whisk egg whites until stiff
Whisk in sugar 1/3 at a time
Fold in cornflour, vinegar and essence
Place half the meringue on a baking sheet –making a circle
Place the remaining meringue in a piping bag and make decorative swirls around the circle.
Place in a preheated oven and reduce heat to 125c
Bake for 1hr 15mins – leaving to cool in oven
Fill meringue with sliced banana
whipped cream with added caster sugar + Baileys (optional)
and lots of Wexford fresh strawberries – topped with passion fruit.
Serve as soon as possible.
